Chewy Oatmeal Raisin Cookies


So I convey a confession to make, I convey already had pumpkin spice coffee, together with it is alone the middle of August. But man child was it good! :) You encounter a local java store had bottles of pumpkin spice out the other twenty-four hours for sale to preview the upcoming autumn drinks. I idea perhaps the season would brand the weather condition cooler! Or I only wanted it, either way, it was inwards the 60's this morning! So I mean value it worked. ;)


It also got me inwards the mood for autumn together with all of the smells together with tastes that become along amongst fall. One of those smells together with tastes that is together with thence prominent is cinnamon, together with i of my favorite things containing cinnamon? Oatmeal raisin cookies!


For me, the best oatmeal raisin cookies convey to convey iii qualities: 1) They must hold out chewy. 2) They must non hold out also sweet, together with thence that yous tin gustation the nuttiness of the oats. 3) They must convey lots of cinnamon together with a hint of nutmeg. Guess what? These cookies convey all three! Hello triple batch! Especially since my married adult man offered to "taste test" together with ended upwards eating to a greater extent than than a couple! Chewy Oatmeal Raisin Cookies
Yield: xviii cookies

Ingredients
  • 5 tbsp butter, softened
  • 1/3 C chocolate-brown sugar
  • 1/4 C saccharide or granulated saccharide substitute
  • 2 tbsp non-fat patently yogurt
  • 1 egg
  • 1 tsp vanilla
  • 3/4 C all-purpose flour or whole wheat pastry flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 tsp cinnamon 
  • 1/4 tsp nutmeg
  • 1 1/2 C quick (not instant) oats
  • 2/3 C raisins

Directions
  1. Preheat oven to 350. Line cookie sheets amongst parchment newspaper or lightly spray amongst non-stick cooking spray.
  2. In the bowl of a stand upwards mixer, cream together butter together with sugars on medium speed. Add inwards yogurt, egg, together with vanilla. Beat until creamy. 
  3. In a small-scale bowl, combine flour, baking soda, salt, cinnamon, together with nutmeg. Add to creamed butter. Beat until well-combined. Stir inwards oats together with raisins.
  4. Drop dough yesteryear heaping tablespoon onto cooking sheets. Bake for 8-10 minutes or until edges only outset to plow lite golden brown. Do non over bake.
